What’s in Your Eggs?

Does anyone remember the original Orange Julius? You could add a raw egg to give it a nutritious boost. Orange Julius is still around today, and uses egg white powder and whey powder, but no more raw eggs. Body builders used raw eggs for decades. Arnold Schwarzenegger says he drank raw eggs and cream to build his sculpted muscles.

Would you drink raw eggs today? You could, but only if you chose pasture-raised eggs. These are eggs laid by hens who have farm land to run around on and are able to grub for bugs and grass like real birds. The hens are never given non-organic feed and are not treated with chemicals or antibiotics. The quality of life of the chickens is considered as a factor in healthy eggs. Pasture-raised eggs go beyond organic. The designation Organic eggs means that the chickens eat organic feed and are raised in an organic environment. The hens may be fed organic corn or other organic feed, vitamins and minerals. Free-range eggs means that the chicken must have some access to outdoors (which they may or may not use) and the size of the territory may not be large. The hens may be given non-organic food and they may receive routine antibiotics. There are no other standards set by the USDA (U.S. Department of Agriculture), so it is up to the egg farmers to decide.

Omega-3 eggs, Antibiotic-free eggs, Vegetarian eggs, Soy-free eggs, and Natural eggs are designations not monitored by government regulatory agencies regarding their claims. So, you are relying on the honesty of egg manufacturers may who cut hens’ beaks, confine them to battery-cages, feed antibiotics constantly and are feeding the hens GMO corn and other non-organic feed. The cages may be filthy and dead chickens may not be removed. Consider all of these eggs as Commercial or Conventional eggs. In one study Omega-3 eggs were found to be higher in Omega-3 fats and lower in Arachidonic Acid, which is associate with inflammation. Battery-cage (electric cage) farming of chickens has been banned in Sweden since 1992, and in other European countries since 2012. The USDA has not banned the practice in the U.S. It is hard to imagine that such inhumane practices lead to the healthiest of eggs.

Eggs are very nutritious. The egg white contains 20 different amino acids, nine of which are essential” for humans, and only 71 calories on average. They have 6 grams of protein, 5 grams of fat. A healthy liver makes 2,000 mg of cholesterol a day, so you don’t need to worry about the 190 mg. of cholesterol in an egg. Eggs have no carbohydrates, so they will keep blood sugar in balance.

In 2007, Mother Earth News tested commercial eggs vs. pasture-raised eggs and found that the pastured chickens laid eggs that had two-thirds more Vitamin A, twice as many Omega-3 fats, three times more Vitamin E and seven times more beta-carotene. Carotenoids are anti-oxidants that reduce inflammation in the body.

Organic eggs are one of the best sources of B12, and also contain iron, B6, Vitamins D and A, Calcium and Magnesium, and a host of traces minerals.

It is best not to over-cook eggs, which causes the protein to become rubbery and unusable by the body. Poached, soft-boiled and raw (organic only!) are easiest for the body to digest. Commercial eggs are dangerous to eat raw, as they may contain salmonella, but organic eggs should be safe. Keep eggs refrigerated and consume within the indicated date on the carton.

Egg shells are porous, and what is outside passes through, so be careful about what rubs against them. Use a quick warm water rinse or use vinegar diluted in water to wash away any debris. Commercial eggs may be washed in chlorine and coated with mineral oil, both of which will penetrate the shell.

The best place to purchase eggs is from small farmers you know and trust. The Burbank Farmer’s Market has a stand called Ha’s Apple Farm. They have delicious organic apples, and sell pasture-raised eggs, some of which have beautiful green shells. Health Food Stores may also sell pasture-raised eggs.

Hope this helps you to look at eggs in a whole new light, after they have been demonized for years. We now know that whole foods are usually heart-healthy foods and that it is sugar and white starches that are the real enemies of hearts and arteries. More on Sunscreens and How to Practice Safe Sun

Titanium Dioxide: • If it is absorbed dermally or ingested where does it go? There are concerns about what the body does with an ingredient that it is unequipped to process. Babies are especially at risk because their skin is thinner, they frequently put their hands in their mouth, and they do not have well developed processes of elimination.• Depending on the type of titanium dioxide (TiO2) and how it is processed TiO2 can degrade more quickly when exposed to UV than non nano zinc oxide, generating free radicals. • The American Cancer Society has identified TiO2 as one of the top five potential cancer-causing substances that requires further study.  http://www.huffingtonpost.com/hillary-peterson/sunscreen-safety_b_890449.html

Jeff also expressed concerns about Zinc Oxide, but it breaks down to Zinc, which is a vital mineral, and oxygen. There is some concern from scientists about the nano-particle zinc oxide, because nano particles may be able to pass into areas of the body where they can store, such as the brain.

Nano particles help with the white pasty look of zinc oxide sunscreen. Mixing the zinc-based sunscreen with some make-up may dilute its effectiveness, don’t forget. I like to layer my sun protection, so adding a mineral powder on top, gives a little extra protection.

Skin cancer is a real risk with sun exposure. The question is why, since the sun is obviously vital for life on Earth? Skin cancer rates are much lower in Mediterranean countries. Early Nutritionists from the 1900’s called whole food, unprocessed fats, Vitamin F, and considered that these healthy fats were a balance to the over-production of Vitamin D from sun exposure. Nature loves balance and will usually provide her own. When processed corn oil, margarines and other refined oils entered the American diet, skin cancer rates soared.

So, enjoying plenty of good fats, vegetables and fruits, may be as beneficial as sunscreen, and give you that extra protection, on the inside.

Sunbathing has only been around for the past 100 years. Before that, a suntan was a sign that one worked outdoors and did not have the luxury of leisure time. Coco Chanel, who inspired women to wear trousers and aspire to elegant but casual fashion, was an advocate of a suntanned look. As a Mediterranean woman, she had the advantage of her French diet.

There are no hard and fast rules about the sun, except one that rule that is universal. Don’t Burn. Know your skin, know your dietary habits, and know your skincare and sunscreen products. If you want to keep your skin looking young, I do recommend avoiding sun exposure.

By the way, ever wonder what the number means when we talk about humidity? It is the amount of moisture the air will hold at a given time. Dew point is how much moisture there is in the air and humidity is how much moisture there is relative to how much the air can hold.  The higher the temperature, the more water the air can hold. There is more to it than that, but you get the idea. Regardless of where you are, if it is summer-time warm, you need to be drinking lots of water and eating veggies and fruits so you have the minerals your body needs to replace what you are losing by sweating.

 

 

 

Stay Strong in Summer Heat

If you have been to see me for a consultation recently, I may have used some new test kits to check you. The first thing that comes up for most people is “hydration”.  The remedy for that is not just water, and many people comment that they are already drinking “so much water”.

But hydration is far more. Most people are also deficient in minerals. The cells of the body don’t want water alone. They want water as a carrier for the building blocks of the cells, and that means minerals. Electrolytes, salt and potassium, are part of that picture. But that does not mean drink Gatorade! That does mean getting more sea salt in your diet, and summer fruits are a source of potassium.

Foods grown in depleted, over-farmed soil, have few minerals, and you are losing minerals in sweat with the heat. So, think minerals to help your body weather the heat better.

One of my favorite summer mineral supplements is Cal Amo. It is a life-saver in humid weather and has the added benefit of helping the lymph system.

The liver is burdened by hot weather, and since most of us have over-worked livers from all the environmental toxins, this can cause summer fatigue. Think liver cleanse, or extra liver support with Milk Thistle herbs and Choline and AF Betafood to help the gall bladder decongest.

Adrenals are stressed by extreme temperatures, as well as summer travel, so extra adrenal support is helpful. Avoiding sugar and going moderate with caffeine will help.

You can never go wrong, in any season, by eating organic foods and avoiding genetically modified foods. The main reason for GMO foods is so the plants will be able to resist pests, and was supposed to reduce the use of pesticides. However, that has not proven to be the case, because Mother Nature has her own way of coping with stress in her environment and it is proving very difficult to fight her. Remember the recipe for a homemade sports drink/lemonade. Juice some fresh organic lemons into spring water, and add a pinch of sea salt, and stevia or honey to taste. For pink lemonade, add a splash of raspberry puree.

And I want to share a recipe for gluten-free pancakes that are high protein and don’t even need syrup. Mash a small banana and add 2 eggs. Whip together to form a “batter”. Pour on an oiled or buttered griddle or pan heated to low-medium heat. Cook until golden and flip. Two eggs make 2 large pancakes or 4-6 smaller ones.  I like them slathered with butter and fresh sliced strawberries. This is a great change from other egg breakfasts and can be used for a snack or other meal. You can roll them up and take them to eat in the car on the way to work. (watch the butter!)

Do All Men Develop Prostate Problems?

According to WebMD, half of all men develop problems of enlarged prostate after fifty and 8 out of 10 after age eighty. http://www.webmd.com/men/guide/prostate-problems   Fortunately, most of these problems are Benign Prostatic Hyperplasia, which does not lead to cancer, but will cause frequent urination and reduced stream.

There are several reasons why the prostate may enlarge that can be addressed with diet and natural medicine. Many of us are eating foods that contain “phytoestrogens”. These are plant-based estrogens that can create estrogen-dominance in women. In men these estrogens can compete with hormonal receptor sites for testosterone, so that men are getting more female than male influence. As testosterone rates decline with age, this can create a kind of estrogen-dominance in men, also. Estrogen is a growth hormone, so it can cause the prostate to enlarge.

Soy is the worst food for excess phytoestrogen, and should be avoided by men completely, except when fermented like tempeh. Soy is highly allergenic, and can cause severe muscle pain, especially in the neck. Some foods will inhibit estrogen. Cow’s milk and gluten in wheat are also estrogenic. Prostate improvement may be obtained by switching to goat and sheep dairy, and using gluten-free grains. Avoiding grains will also help with weight management and reduction of belly fat.

Fat cells also produce estrogen, so belly fat will contribute to too much circulating estrogen. Man-boobs in obese men are not just fat deposits-they are the result of excess estrogen.

Xenoestrogens are chemicals that have estrogenic actions in the body. They are toxins that bind with cell receptors for sex hormones. This is one reason for low testosterone in men. Your best defense is to eat organic food, and shop at health food stores for your personal care products. We are all over-exposed to environmental chemicals that we cannot avoid, so when you have a choice, pick organic and natural ingredients in the products you buy for home, pets and personal use. Do a cleanse and get checked for chemical and metal toxicity. This will also help to protect your from cancer.

Mineral deficiencies are also found in men with prostate problems. Zinc, iodine and calcium are needed for healthy prostates. Healthy oils will help maintain the correct calcium balance between bones, blood and tissue, so it is not enough to eat enough calcium in the diet. Good fats like fish oil must be included. Saw-palmetto is a plant nutrient that can be effective.

For older men, I like to use DIM, an extract from vegetables that helps the liver metabolize excess estrogen. Eating vegetables like kale, broccoli, cauliflower, Brussels sprouts, and cabbage will also help the liver.

Most men who have prostate issues will ignore them and live with them, according to studies. But you can be pro-active and the changes you make at home will only enhance your health and well-being in general.
